An eye opener: the relaxed surroundings where girls are drinking without fear and no eyes fixed upon them. Or leery men passing rude comments. Even as two friends danced away, we continued our journey of drinking and making merry with the owners Kumar Sambhav, Director cum Liquid Specialist, and Chef Gautam Chaudhry, Chef Owner cum Food Designer who specialises in progressive world cuisine.
Sambhav treated us to some well designed and well mixed cocktails which he has made over years of experience in the hospitality industry. With extensive use of fresh fruits, there is a special Barracks Molecular Mixology menu. I liked the Regiment Spring Cocktail which had cucumber, basil and lemon juices mixed with cointreau. Gunner was made with watermelon juice and Chief of Staff has orange juice with a good dose of vodka and cointreau. As Sambhav has worked on a cruise ship too, he can make a mean cocktail in seconds on demand.
Coming to the food, Chef Gautam does not claim to have changed any traditional recipe on the menu. He has simply added his years of experience and improvised to suit the palate of current times. He prefers local and imported ingredients to enhance local flavours. The portions are good and the starters go very well with the drinks, for maximum people come to drinks, says the Chef. I did find the paneer and chicken a little on the spicier side but then its individual palate that works. I enjoyed kumbh kee galouti, dahi ke kabab, chicken duet tikka. The highlight of any platter is that you find two different kinds of food in it as the chef understands that spice lies in variety. And the presentation is praiseworthy.
As for the ambience, the army styled café has a seating capacity of 125 people. Despite the rifles, guns and pistols around you, no one carries them on person!
